Simple Fish Recipes for
Cooking Your Own Catch

We’ve posted a few easy fish recipes here because if you do any fishing while on your Panama City Beach vacation, you’ll surely want to cook your catch. The fresher the fish the better and less fishy it tastes. We’ve collected a number of fish recipes over the years. We’ve selected one for frying, one for broiling, one for grilling and one for solar cooking. These recipes require few ingredients and we think are the simplest to fix while vacationing.

Lemon Pepper Fish

Fish Fillets
Lemon Pepper
Non-Stick Spray

Spray a skillet with non-stick spray. Add fillets & sprinkle with lemon pepper. Cook until fish is light colored and flaky. Flip once. I prefer fillets that have been skinned for this recipe.

Lemon Oregano Fish Broiled Mackerel

Fish Fillets
Lemon Juice
Oregano
Non-Stick Spray

Spray a broiling pan with non-stick spray. Place fish fillets skin side down on pan. Squeeze lemon juice over the fish & sprinkle with oregano. Broil until the top is slightly browned. Flip and broil until skin bubbles (this makes it easy to scrape of the skin when you eat it). If the end is very thin, fold it under to keep if from over cooking. Flip and broil until fish is done.

King Mackerel Mignons

King Mackerel cut into 1-1.25” steaks
Italian Salad Dressing
Raw Bacon
Gallon Ziplock Bags
Toothpicks

Carefully cut the skin and veins off from around the edges of the steaks. Place them in a Ziplock bag with enough Italian salad dressing to coat them. Marinate them several hours to over night. Wrap a slice of bacon around the outside of each steak and secure with a toothpick. Grill until fish is flaky and bacon is done. If you do not have access to a grill, this recipe works well in a broiler.

Solar Cooked Cajun Fish Solar Cooked Cajun Mackerel

Fish Fillets
Cajun Seasoning
Non-Stick Spray

Lightly spray a dark covered pan with non-stick spray. Place fish fillets skin side down in pan. Sprinkle with cajun seasoning. Put lid on and place in solar cooker for 30-75 minutes until fish is cooked and flakes easily with a fork. Cooking time will vary depending on how sunny it is and how thick the fish fillets are.
